Cuban black beans
Ingredients/Components
- sugar - 1 tsp
- salt - 2 tsp
- vinegar - 1 Tbsp
- pepper - 1 tsp
- cloves garlic, minced - 4 item
- can tomato paste - 1 oz
- chopped green onions - 1 item
- olive oil - 1/4 c
- chopped tomatoes - 1 item
- hot cooked rice - 1 item
- green pepper, chopped - 1 item
- large onion, chopped - 1 item
- shredded cheese - 1 item
- jar diced pimiento, drained - 1 oz
- dried black beans - 1 lb
How to make cuban black beans:
Sort and wash beans; place in large Dutch oven. Cover with water 2 inches above beans; let soak 8 hours. Drain well.Saute onion, green pepper, garlic and pimiento in olive oil until tender. Combine beans, sauteed vegetables, 5 cups water and next 5 ingredients; bring to boil. Cover, reduce heat and simmer 2 hours or until beans are tender, stirring occasionally. Serve over rice. Garnish with cheese, tomatoes and green onions.
