Crustless asparagus quiche
Ingredients/Components
- eggs, beaten - 2 item
- pepper - 1/4 tsp
- evaporated skim milk
- chopped scallions - 1/4 c
- shredded Swiss cheese, divided - 2 oz
- margarine, divided - 2 tsp
- cooked chopped asparagus - 1 c
- dash of each: salt and ground red pepper - 1 item
How to make crustless asparagus quiche:
Preheat oven to 375°. Saute scallions until soft in 1 teaspoon margarine. Combine scallions, asparagus, milk, eggs, 1 ounce cheese and seasonings. Butter a 7-inch pie dish with remaining margarine; pour in egg mixture. Sprinkle with remaining cheese.
