Ingredients/Components

  • eggs, beaten - 2 item
  • pepper - 1/4 tsp
  • evaporated skim milk
  • chopped scallions - 1/4 c
  • shredded Swiss cheese, divided - 2 oz
  • margarine, divided - 2 tsp
  • cooked chopped asparagus - 1 c
  • dash of each: salt and ground red pepper - 1 item

How to make crustless asparagus quiche:

Preheat oven to 375°. Saute scallions until soft in 1 teaspoon margarine. Combine scallions, asparagus, milk, eggs, 1 ounce cheese and seasonings. Butter a 7-inch pie dish with remaining margarine; pour in egg mixture. Sprinkle with remaining cheese. Bake for 35 minutes, until knife inserted comes out clean.
