Ingredients/Components

  • sliced almonds - 1/2 c
  • butter or margarine, melted
  • margarine - 1 Tbsp
  • chopped onion - 2 Tbsp
  • chopped celery - 1 c
  • crushed cornflakes - 1/2 c
  • salt and pepper to taste - 1 item
  • mayonnaise - 3/4 c
  • can condensed cream of chicken soup - 1 3/4
  • cooked rice
  • can sliced water chestnuts, drained - 1 oz
  • cubed cooked chicken - 2 c
  • sliced almonds optional - 1 item

How to make crunchy chicken casserole:

Topping:1 Tbsp. butter or margarine, melted1/2 c. crushed cornflakes sliced almonds (optional) Boil chicken until it comes off bones easily. Take off fire and cool. Remove bones and skin. In same pot with chicken water, add onion, celery, rice, salt and pepper. Cook until rice is nearly absorbed. Could add a can of chicken and rice soup if desired.
