Crunchy chicken casserole
Ingredients/Components
- butter or margarine - 4 Tbsp
- sliced almonds - 1/2 c
- butter or margarine, melted
- chopped onion - 2 Tbsp
- chopped celery - 1 c
- crushed cornflakes - 1/2 c
- salt and pepper to taste - 1 item
- mayonnaise - 3/4 c
- cubed, cooked chicken - 2 c
- cooked rice
- can sliced water chestnuts, drained - 1 oz
- sliced almonds optional - 1 item
- can condensed cream of chicken soup, undiluted - 1 3/4
How to make crunchy chicken casserole:
Topping:1 Tbsp. butter or margarine, melted1/2 c. crushed cornflakes sliced almonds (optional) In a skillet, saute celery in butter until tender. Remove from the heat; add the next 8 ingredients. Spoon into an ungreased 2 1/2-quart baking dish. Combine melted butter and cornflakes; sprinkle on top of casserole. Sprinkle with almonds, if desired. Bake, uncovered, at 350° for 30 minutes.
