Ingredients/Components

  • butter or margarine - 4 Tbsp
  • sliced almonds - 1/2 c
  • butter or margarine, melted
  • chopped onion - 2 Tbsp
  • chopped celery - 1 c
  • crushed cornflakes - 1/2 c
  • salt and pepper to taste - 1 item
  • mayonnaise - 3/4 c
  • cubed, cooked chicken - 2 c
  • cooked rice
  • can sliced water chestnuts, drained - 1 oz
  • sliced almonds optional - 1 item
  • can condensed cream of chicken soup, undiluted - 1 3/4

How to make crunchy chicken casserole:

Topping:1 Tbsp. butter or margarine, melted1/2 c. crushed cornflakes sliced almonds (optional) In a skillet, saute celery in butter until tender. Remove from the heat; add the next 8 ingredients. Spoon into an ungreased 2 1/2-quart baking dish. Combine melted butter and cornflakes; sprinkle on top of casserole. Sprinkle with almonds, if desired. Bake, uncovered, at 350° for 30 minutes. Yield: 6 to 8 servings.
