Crumb coffee cake
Ingredients/Components
- sugar - 1 c
- chopped nuts - 1/2 c
- soda - 1/2 tsp
- buttermilk - 1/2 c
- baking powder - 1 tsp
- all-purpose flour - 2 c
- beaten egg - 1 item
- raisins if desired - 1/2 c
- butter or other shortening - 1/2 c
- each: ginger, cinnamon, nutmeg and mace - 1/2 tsp
How to make crumb coffee cake:
Sift together the sugar, flour, ginger, cinnamon, nutmeg and mace. Work in butter or other shortening, as in making biscuits. Take out 1 cup of this crumbly mixture and set aside.Mix together egg, soda, buttermilk and baking powder. Stir this mixture into the flour and shortening mixture, beating until well mixed. Add 1/2 cup chopped nuts (1/2 cup raisins can also be added, if desired).
Butter a square cake pan with fairly deep sides. In the bottom, spread 1/2 of the reserved crumbs, pour in the batter, spreading it evenly. Then sprinkle the remaining crumbs over the top. Bake 40 minutes in a 350° oven. Let cool in pan.
