Ingredients/Components
- pepper - 1 tsp
- Dijon mustard - 2 Tbsp
- chopped garlic - 1/2 tsp
- boneless, skinless chicken breasts - 1 lb
- oil canola or olive - 1 tsp
- medium potato not peeled - 1 item
How to make crispy potato chicken:
Preheat oven to 425°. Arrange chicken in a 9 x 9-inch baking dish that has been sprayed with nonstick coating. Mix mustard and garlic. Spread over chicken. Scrub potato, grate and mix well with oil. Spread over chicken. Sprinkle with pepper. Bake for 25 to 35 minutes, until chicken is done and potatoes are golden. Calories per serving: 205. Exchanges: 4 lean meat, 1/2 starch.Hint: Can buy garlic chopped in jar to keep in refrigerator.
