Crispy potato chicken
Ingredients/Components
- Dijon mustard - 1 Tbsp
- olive oil
- large clove garlic - 1 item
- large baking potato - 1 item
- chicken breast halves skinless - 4 item
How to make crispy potato chicken:
Peel and grate potatoes; put into water for 5 minutes. Drain and pat dry. Mix in olive oil. Put chicken, bone side down, in a foil-lined pan. Spread each with mustard mix (mustard and garlic). Form a skin over each breast with potatoes. Season with salt and pepper. Sprinkle with Parmesan cheese and cilantro.
