  • paprika - 1/8 tsp
  • grated Parmesan cheese - 1/4 c
  • garlic salt - 1/4 tsp
  • parsley flakes - 2 tsp
  • dash of pepper - 1 item
  • onion powder - 1/2 tsp
  • mashed potato flakes - 2/3 c
  • margarine or butter, melted - 1/3 c
  • whole chicken, quartered, skinned, rinsed and patted dry - 1 item

How to make crispy herb chicken:

Heat oven to 375°. Grease a 13 x 9-inch pan. In medium bowl combine potato flakes, Parmesan cheese, parsley flakes, onion powder, garlic salt, paprika and pepper. Stir until well mixed. Dip chicken pieces into margarine; roll into potato flake mixture to coat. Place in greased pan. Bake at 375° for 60 to 75 minutes or until chicken is tender and golden brown. Makes 4 to 5 servings.
