Ingredients/Components
- buttermilk - 1/2 c
- catfish fillets - 2 lb
- saltine crackers, finely crushed - 1/4 lb
- squeeze margarine - 1 item
How to make crispy baked fish fillets:
Season fish with Tony's seasoning. Add buttermilk and toss to coat. Roll each piece in cracker crumbs. Spray wire rack with Pam and put on cookie sheet. Place fillets on rack. Dribble small amount of squeeze margarine over each piece. Bake at 350° for 30 to 45 minutes until golden color and crisp around edges.Low-Fat Version: Use fat-free buttermilk, fat-free crackers and substitute butter flavored cooking spray such as Pam for the squeeze margarine.
