Crispy baked chicken



  • salt - 1/2 tsp
  • margarine or butter - 3 Tbsp
  • egg, beaten - 1 item
  • pepper - 1/4 tsp
  • grated Parmesan cheese - 1/4 c
  • cut up broiler-fryer chicken - 2 to
  • Potato Buds mashed potatoes dry

How to make crispy baked chicken:

Heat oven to 425°. Heat margarine in 9 x 13 x 2-inch pan until melted. Mix potatoes, cheese, salt and pepper. Dip chicken into egg; roll in potato mixture. Place skin side up in pan. (Chicken can be skinned.) Bake uncovered about 50 minutes or until thickest pieces are done and coating is golden brown and crisp. Makes 6 servings.
