Creole sauce



Ingredients/Components
- salt - 1/2 tsp
- pepper - 1/4 tsp
- clove garlic, minced - 1 item
- onion, chopped - 1/2 c
- olive oil - 1/4 c
- celery, diced - 1/2 c
- small bay leaf - 1 item
- green pepper, chopped - 1/3 c
- tomato puree - 1/2 c
- thyme - 1/2 tsp
- can plum tomatoes, chopped - 1 lb
- sugar if needed - 1 item
- shrimp, scallops or any seafood item - 1 item
How to make creole sauce:
Heat oil in saucepan. Add onion, green pepper, celery and garlic and saut?© over medium heat until tender; do not brown. Add tomatoes, tomato puree, bay leaf, thyme, salt and pepper. Bring to a boil; reduce heat and simmer, covered, for 1 1/2 hours. Taste for seasoning. May need some sugar to cut acidity of tomato products.
