Creole black-eyed peas
Ingredients/Components
- slices bacon, fried crisp and crumbled - 4 item
- chopped onion - 1 c
- chopped green pepper - 1 c
- chopped celery - 1 c
- can diced tomatoes and green chilies Ro-Tel - 1 oz
- cooked black-eyed peas - 4 c
- salt to taste - 1 item
- bay leaf - 1 item
How to make creole black-eyed peas:
Saute onion, green pepper and celery in bacon drippings until tender. Stir in Ro-Tel, black-eyed peas, salt, bay leaf and 1/2 of crumbled bacon. Cook over low heat for 30 to 45 minutes, stirring occasionally. Add water, if necessary. Remove bay leaf and sprinkle with remaining crumbled bacon just before serving.Recipe categories: Side dish, Beans, Chickpeas/garbanzos.
