Ingredients/Components

  • flour - 1 Tbsp
  • brown sugar - 2 Tbsp
  • water - 6 c
  • Worcestershire sauce - 1 tsp
  • diced green pepper - 1/2 c
  • chopped onion - 3/4 c
  • prepared mustard - 2 tsp
  • salt and pepper - 1 item
  • seasoned salt - 1 tsp
  • canned tomatoes
  • dried large lima beans - 1 lb

How to make creole beans:

Bring water to boil and add beans. Boil 2 minutes. Cover and let stand 1 hour. Return to heat and simmer, covered, until tender, a fork pierces a single bean easily; drain. Saute onion and green pepper in a little oil. Stir in flour, seasonings and sugar. Add tomatoes and simmer, uncovered, for 10 minutes. Stir in cooked beans; heat through. Makes 8 servings.
