Ingredients/Components

  • sugar - 1/2 c
  • vanilla extract - 1 tsp
  • margarine, softened - 1/2 c
  • dash of salt - 1 item
  • eggs, lightly beaten - 4 item
  • miniature marshmallows - 1 item
  • ground nutmeg - 1/2 tsp
  • orange juice - 1/2 c
  • sweet potatoes, peeled and cooked - 5 lb

How to make creamy sweet potatoes:

In a large bowl, mash sweet potatoes. Add eggs, orange juice, margarine, sugar, vanilla, nutmeg and salt; mix well. Transfer to a greased 3 quart baking dish. Bake at 350° for 35 to 40 minutes or until set. Top with marshmallows; return to oven un
