  • sugar - 2/3 c
  • half and half
  • vanilla - 1 tsp
  • salt - 1/2 tsp
  • butter - 2 Tbsp
  • cornstarch - 2 tsp
  • water
  • egg yolks - 4 item
  • converted type rice - 2/3 c

How to make creamy rice pudding:

In a medium saucepan, bring the rice and water to a boil. Simmer, covered, until the rice is very tender and most of the water is absorbed, about 25 minutes.

In a small bowl, stir together the cornstarch and salt. Stir into hot rice mixture with half and half. Stirring constantly, bring to a boil and boil 1 minute. Off heat, stir in the butter and vanilla.

In a small bowl, slightly beat the egg yolks. Gradually stir in about 1 cup of the hot rice mixture. Stir back into remaining rice mixture.

Stirring often, cook over moderate heat just until mixture starts to bubble. Let stand at room temperature and serve warm. Makes about 5 cups (6 to 8 servings).
