Ingredients/Components

  • salt - 1 tsp
  • flour - 1 Tbsp
  • water - 2 Tbsp
  • eggs, beaten - 2 item
  • dry mustard - 1 tsp
  • mayonnaise - 2 Tbsp
  • minced onion - 1/4 c
  • finely chopped green pepper - 1/3 c
  • dash of cayenne - 1 item
  • finely chopped celery - 1/3 c
  • white vinegar - 2 Tbsp
  • cubed cooked potato - 3 c
  • undiluted evaporated milk, whipped - 1/3 c

How to make creamy potato salad:

Combine flour, mayonnaise, vinegar, mustard, salt, cayenne and water in top part of double boiler. Mix in eggs and cook, over simmering water, until thickened. Put in refrigerator until cold. Fold into whipped evaporated milk. Mix with remaining ingredients and chill.
