Creamy cole slaw
Ingredients/Components
- salt - 2 tsp
- medium carrots, finely shredded - 2 item
- mayonnaise - 2 c
- black pepper - 1 item
- cabbage, finely shredded - 2 lb
- sweet pickle vinegar * - 4 Tbsp
How to make creamy cole slaw:
*If using a tart vinegar, add 2 teaspoons sugar.Shred cabbage. Place in bowl with salt and enough cold water to just cover. Soak for 1 to 2 hours (this will eliminate wild taste). Drain cabbage well in large strainer, squeezing out as much water as possible. Place in large bowl.
In small bowl, mix mayonnaise, vinegar and grated carrots. Pour over cabbage. Add pepper to taste. Chill before serving.
