Creamy chicken salad



  • chopped pecans - 1/4 c
  • honey - 1 tsp
  • poppy seed - 1 tsp
  • orange juice - 1 tsp
  • chopped onion - 2 Tbsp
  • chopped celery - 2 Tbsp
  • plain yogurt - 1/3 c
  • seedless grapes, halved - 1/2 c
  • medium orange - 1 item
  • orange peel - 1/2 tsp
  • cooked, cubed chicken or turkey - 1 c

How to make creamy chicken salad:

Dressing: Shred the peel from the orange; peel and section orange over bowl to catch and reserve 1 teaspoon juice. (Set aside sections.) Combine peel, juice, yogurt, honey and poppy seed. Cover and chill.

Toss together remaining ingredients; place on spinach lined plate. Top with 1 tablespoon dressing for each serving. Serves 2.
