Creamy carrot casserole
Ingredients/Components
- butter or margarine, melted - 1 Tbsp
- prepared horseradish - 2 Tbsp
- shredded Cheddar cheese - 1/2 c
- mayonnaise - 2 c
- grated onion - 2 Tbsp
- dry bread crumbs - 1/4 c
- carrots, peeled and sliced or 2 20 oz - 3 lb
How to make creamy carrot casserole:
In a saucepan, cook carrots just until tender, but still crisp; drain, reserving 1/2 cup cooking liquid. Place carrots in two 1 1/2-quart or one 3-quart lightly greased baking dish.Combine the mayonnaise, onion, horseradish and reserved cooking liquid; spread evenly over carrots. Sprinkle with cheese. Toss bread crumbs with butter; sprinkle over cheese. Bake, uncovered, at 350° for 30 minutes. Yield: 16 to 20 servings.
