  • pkg - 2 oz
  • margarine - 1 Tbsp
  • skim milk - 3 c
  • chopped onion - 1 c
  • chopped celery - 1/2 c
  • chicken broth - 1 c
  • cooked white rice - 1 c
  • nutmeg and fresh ground pepper - 1 item

How to make creamy asparagus soup:

In a heavy 3 or 4-quart saucepan, cook onion and celery in margarine about 5 minutes, stirring several times until softened. Add rice, asparagus and broth. Cover and simmer 8 to 10 minutes. Puree in batches in food processor or blender. Return to saucepan. Add milk and heat to boiling point. Season with nutmeg and pepper. Makes 6 cups.
