Ingredients/Components

  • salt - 1 tsp
  • nutmeg - 1/4 tsp
  • all-purpose flour - 2 Tbsp
  • light cream
  • unsalted butter - 2 Tbsp
  • boxes frozen chopped spinach, thawed - 2 oz

How to make creamed spinach:

Gently squeeze the spinach, discarding excess water. Place in a nonaluminum saucepan and cook over a low heat, stirring constantly for about 5 minutes until it's tender, but still bright green. Add cream, salt and nutmeg and simmer for 5 minutes until the cream has bubbled and reduced slightly.

Meanwhile, melt the butter in a small skillet. Add the flour and cook over low heat, stirring for 3 or 4 minutes, then serve.
