Ingredients/Components
- pkg - 2 oz
- all-purpose flour - 1 Tbsp
- skim milk - 3/4 c
- dash of ground nutmeg - 1 item
- freshly grated Parmesan cheese - 1 Tbsp
- minced onion - 1/4 c
- ground black pepper - 1/8 tsp
- garlic cloves, minced - 2 item
- sherry - 2 Tbsp
- unsalted margarine - 1 Tbsp
How to make creamed spinach:
Cook spinach according to package directions but without salt.Meanwhile, in a medium size saucepan over medium-high heat, melt margarine. Add onion and garlic and cook about 3 minutes. Stir in flour and cook, stirring for 1 minute. Stir in wine; cook about 30 seconds. Gradually add milk, stirring constantly. Continue cooking until thickened, about 2 to 3 minutes. Stir in Parmesan cheese, pepper and nutmeg. Drain spinach well and stir into sauce. Makes 6 servings.
Each serving contains 60 calories, 3 g fat, 1 mg cholesterol and 110 mg sodium.
