Creamed peas
Ingredients/Components
- sugar
- flour - 1 tsp
- butter
- cream
- garlic powder - 1/2 tsp
- chili powder - 1/2 tsp
- catsup - 1/2 c
- prepared mustard - 1 tsp
- salt and pepper to taste - 1 item
- medium onion - 1 item
- celery seed - 1/2 tsp
- cooked peas - 1/2 c
- bay leaves - 2 item
- sugar optional - 1/2 tsp
- Rockwell or pinto beans - 3 c
How to make creamed peas:
Wash beans well, cover with water 3 to 4 times height of beans, bring to boil, then simmer 1 hour or until bean skins slip off easily. Drain and rinse twice. Place in baking dish, add remaining ingredients and then water to well above top of beans. Bake at 300° for 2 hours, then at 275° for 3 hours. Check to make sure liquid covers beans, but do not stir. Leave in oven overnight. Reheat the following day.Engles have farmed island land over 100 years. This recipe, over 100 years old, was my mother's original and has been passed on to my daughter.
