  • milk - 1 c
  • sour cream - 1/2 pt
  • salt - 1/2 tsp
  • flour - 2 Tbsp
  • carrots - 1 lb
  • pepper to taste - 1 item
  • chopped parsley - 2 Tbsp
  • instant minced onion - 1 tsp
  • dash of cayenne pepper - 1 item
  • buttered bread crumbs - 2 4
  • boiling salted water - 1 item
  • recipe Basic Sour Cream Sauce - 1/2 item
  • Butter a 1-quart casserole dish

How to make creamed carrots:

Preheat oven to 350°. Butter a 1-quart casserole dish. Peel carrots. Slice diagonally. Cook in small amount of boiling, salted water until tender. Drain. Prepare Basic Sour Cream Sauce. Fold in carrots, parsley, onion and pepper. Turn into buttered casserole dish. Prepare bread crumbs to sprinkle over casserole. Bake for 15 minutes.Basic Sour Cream Sauce:2 Tbsp. butter2 Tbsp. flour1 c. milk1/2 tsp. salt dash of cayenne pepper1/2 pt. sour cream On medium heat, melt butter in a stainless steel saucepan. Stir in flour and cook until bubbly. Add milk and cook, stirring until thickened and smooth. Stir in salt and cayenne pepper. Empty the sour cream into a medium bowl. Gradually add heated sauce, stirring constantly. Return to pan and heat gently to serving temperature.
