Ingredients/Components

  • milk - 1 c
  • salt - 1 tsp
  • flour - 3 Tbsp
  • butter - 1/4 c
  • light cream - 2 c
  • pepper - 1/4 tsp
  • cans chicken broth - 2 1/2
  • medium onion, chopped - 1 item
  • thyme - 1/2 tsp
  • cabbage, shredded - 1 (3
  • ribs celery, chopped - 2 item
  • carrot, chopped - 1 item
  • cooked ham - 2 c

How to make creamed cabbage soup:

In a large kettle, combine first 5 ingredients; bring to a boil. Reduce heat, cover and simmer until vegetables are tender. Meanwhile, melt butter in a medium pan. Add flour, salt and pepper; stir to form a smooth paste. Gradually add cream and milk to flour mixture, stirring constantly. Cook until thickened. Continue cooking 1 minute longer. Gradually stir into vegetables. Add ham and thyme; heat through. Makes 8 to 10 servings.
