Cream wafers
Ingredients/Components
- vanilla - 1 tsp
- sifted flour - 2 C
- soft butter - 1 C
- thick cream - 1/3 C
How to make cream wafers:
Filling:1/4 C. soft butter3/4 C. sifted confectioners' sugar1 tsp. vanilla Mix well the butter, cream and flour. Chill. Heat oven to 375 degrees. Divide dough into thirds, using 1/3 at a time, leaving the rest in the refrigerator. Roll out to 1/8 inch thick on floured board. Cut with 1 1/2 inch cookie cutter. Transfer rounds to a piece of waxed paper that has been heavily coated with granulated sugar. Turn each round with a spatula so that both sides are coated with sugar. Place on ungreased baking sheet. Prick each cookie with a fork about four times to prevent them from bubbling. Bake for 7 to 9 minutes. Cool.FILLING: Blend all filling ingredients well and spread between two cookies. Yield: about 4 dozen sandwich cookies.
