Ingredients/Components
- vanilla - 1 tsp
- confectioners sugar - 3/4 c
- soft butter - 1 c
- whipping cream - 1/3 c
- Gold Medal flour - 2 c
- Roll about 1/3 of the dough at a time 1/8-inch thick on a flour cloth covered board
How to make cream wafers:
Mix, cover and chill until hard. Roll about 1/3 of the dough at a time 1/8-inch thick on a flour cloth covered board. Keep remaining dough chilled. Cut into 1 1/2-inch rounds. Transfer onto wax paper, heavily covered with granulated sugar, so each side is well covered. Place on ungreased cookie sheet. Prick each round with a fork 4 times. Bake 7 to 9 minutes or until nice and brown. Put cookies together in pairs with creamy filling. Makes 5 dozen cookies.Creamy Filling:1/4 c. soft butter3/4 c. confectioners sugar1 tsp. vanilla Cream together until smooth. A few drops of water may be added for proper consistency.
