Cream puffs
Ingredients/Components
- sugar - 3/4 c
- eggs - 4 item
- vanilla - 1 tsp
- milk - 2 c
- salt - 1 tsp
- flour - 1 c
- boiling water - 1 c
- shortening - 1/2 c
- egg yolks, beaten - 2 item
- Bring to boil
- cream cornstarch - 1/4 c
How to make cream puffs:
Add shortening to boiling water. Bring to boil. Add flour; stir vigorously until ball forms. Cool slightly and add unbeaten eggs, one at a time. Mixture will be stiff. Drop by spoonful. Bake at 450° for 15 minutes. Reduce heat to 350° and bake 30 minutes. (See Custard Filling for stuffing.)Custard Filling:2 Tbsp. margarine1/4 c. cream cornstarch3/4 c. sugar1/2 tsp. salt2 c. milk2 egg yolks, beaten1 tsp. vanilla Melt margarine; blend cornstarch, salt and sugar. Gradually add milk. Heat to boil over direct heat. Remove from heat. Stir in egg yolks. Return to heat and cook 2 minutes. Stir constantly. Add vanilla.
