  • sugar
  • eggs - 4 item
  • vanilla - 2 tsp
  • milk - 2 c
  • salt - 1/2 tsp
  • flour - 6 Tbsp
  • butter - 1/2 c
  • water - 1 c
  • pinch of salt - 1 item
  • sifted flour - 1 c
  • egg yolks or 2 whole eggs - 4 item

How to make cream puffs:

Custard Filling:1/2 c. sugar1/2 tsp. salt6 Tbsp. flour2 c. milk4 egg yolks or 2 whole eggs2 tsp. vanilla Heat water and butter to a rolling, boiling point in saucepan. Stir in flour and salt all at once. Continue to stir over low heat until mixture leaves the pan and forms a ball (about 1 minute). Remove from heat and beat in eggs, one at a time. Beat until smooth and velvety. Drop by spoon onto ungreased baking sheet. Bake until dry at 400° for 45 to 50 minutes. Makes 8 large puffs. Fill with custard filling when cool.

Custard Filling: Mix sugar, salt and flour in saucepan. Stir in milk and cook over low heat, stirring until it boils. Boil 1 minute. Remove from heat. Stir a little of this mixture into the eggs (beaten). Blend into hot mixture in saucepan. Bring to boiling point. Cool and blend in vanilla. Cut tops off puffs and fill.
