Ingredients/Components
- sugar - 1/2 c
- eggs - 4 item
- vanilla - 1 tsp
- milk - 2 c
- salt - 1/2 tsp
- flour - 6 Tbsp
- butter - 1/2 c
- water
- eggs, well beaten - 2 item
How to make cream puffs:
Pastry:1 c. water1/2 c. butter1 c. flour4 eggs Custard: Mix first 3 ingredients in a saucepan; stir in milk. Heat on medium heat, stirring constantly until starts to boil. Boil 1 minute. Take off heat and add small amount of custard into eggs. Blend back into custard mixture. Bring to a boil; cool and blend in vanilla. Refrigerate until cold, then fill puffs.Pastry: Heat to boiling the water and butter; then stir in flour. Stir constantly, until dough leaves sides of pan and forms a ball (approximately 1 minute). Cool; beat in eggs, 1 at a time. Drop from a tablespoon onto a greased cookie sheet. Bake at 400° for 35 to 40 minutes, until golden. Cool. Cut tops off; fill with custard and replace tops. Sprinkle with powdered sugar. Refrigerate in airtight container. Yields 8 large or 12 small cream puffs.
