Ingredients/Components

  • sugar - 3/4 c
  • eggs - 4 item
  • vanilla - 1 tsp
  • milk - 2 c
  • salt - 1/4 tsp
  • flour - 1 c
  • cornstarch - 1/4 c
  • water - 1 c
  • shortening - 1/2 c
  • egg yolks, slightly beaten - 2 item
  • Stir until mixture leaves sides of pan

How to make cream puffs:

Bring water and shortening to a boil; add dry ingredients. Stir until mixture leaves sides of pan. Cool slightly. Add beaten eggs, one at a time. Drop by teaspoon on ungreased cookie sheet. Bake at 400° for 40 to 45 minutes. Cool and fill with custard filling.Custard Filling (Cream Puffs):2 Tbsp. butter1/4 c. cornstarch3/4 c. sugar1/2 tsp. salt2 c. milk2 egg yolks, slightly beaten1 tsp. vanilla Melt butter. Blend in cornstarch, sugar and salt. Gradually add milk. Heat to a boil. Stir in egg yolks. Heat and cook 2 minutes, stirring constantly. Add vanilla. Cool. Use to fill Cream Puffs or pie.
