  • sugar - 1 Tbsp
  • milk - 1 c
  • salt - 1/8 tsp
  • flour - 1 c
  • egg yolks - 6 item
  • stick butter - 1 item
  • eggs at room temperature - 4 item

How to make cream puffs:

"Cream Filling":2 c. milk6 egg yolks2/3 c. sugar1/2 c. flour Combine flour, salt and sugar; set aside. Melt milk and butter, allow to boil. Add flour mixture and stir, remove from flame. Add one egg at a time and stir. Grease and flour cookie sheet and spoon cream puffs onto cookie sheet with tablespoon. Place in oven at 400° for 10 minutes, then at 350° for 25 minutes.

Cream Puff Filling: Bring milk to a boil; set aside. Place egg yolks, sugar and vanilla in bowl, work with wire wisk until it forms a ribbon. This takes 3 to 4 minutes. Add flour and mix well. Add 1/2 of hot milk to yolk mixture; mix well. Pour yolk mixture into remaining milk. Bring to a boil on medium heat, stir constantly. Cream will thicken after 2 to 3 minutes; stir constantly to avoid scorching. Be sure to get into corners of saucepan. Place cream in bowl, cover with plastic wrap to avoid skin forming on top. Put in refrigerator overnight. Fill cream puff.
