Ingredients/Components

  • milk - 2 C
  • salt - 1/8 tsp
  • margarine - 1 Tbsp
  • pepper - 1/8 tsp
  • chicken broth
  • bay leaf - 1 item
  • cloves garlic, crushed - 3 item
  • medium onion, sliced thin - 1 item
  • dried thyme, crumbled - 1/4 tsp
  • large carrot, sliced thin - 1 item
  • large potato, sliced thin - 1 item

How to make cream of vegetable soup:

In heavy saucepan over low heat, melt margarine. Add carrot, onion, potato, garlic and bay leave and thyme. Tossing to coat with margarine. Stir in half cup chicken broth. Cover and cook 15 minutes. Raise heat to moderate, stirring in remaining two cups broth and milk. Cook uncovered, stirring occasionally, until vegetables are tender. Remove bay leaf. Add remaining broth, salt and pepper. Cook 3 more minutes.
