  • sugar - 1 tsp
  • milk - 1 c
  • salt - 1/2 tsp
  • flour - 2 Tbsp
  • butter - 3 Tbsp
  • light cream - 1 c
  • lemon juice - 1 tsp
  • chicken broth
  • fresh spinach - 1 lb

How to make cream of spinach soup:

Cook the spinach in the butter with the salt until slightly wilted. Sprinkle with the flour and add the milk and chicken broth; simmer for 15 to 20 minutes. Let cool. Puree in a blender or put through a food mill. Heat with the cream, lemon juice and sugar. Add more salt if needed. Serves 4.
