Cream of potato soup
Ingredients/Components
- milk - 2 c
- salt
- light cream or evaporated milk - 2 c
- pepper - 1/4 tsp
- chopped onion - 1 c
- large potatoes - 5 item
- parsley - 1 item
- sliced carrots - 1/2 c
- sliced celery - 1 c
- Cheddar cheese, shredded - 1 item
- slices bacon - 6 item
How to make cream of potato soup:
Wash, pare and slice potatoes. Cook with carrots in boiling water until tender. Drain. Saute bacon until crisp. Drain and crumble. Saute onion and celery in 2 tablespoons of bacon fat. Combine all ingredients, except cheese and parsley. Simmer for 30 minutes. Garnish with Cheddar cheese and parsley.Recipe categories: Lunch/snacks, Main dish, Bisques/cream soups.
