Ingredients/Components

  • salt - 1 tsp
  • water - 2 c
  • all-purpose flour - 1/4 c
  • milk, divided - 3 c
  • pepper - 1/8 tsp
  • finely chopped onion - 1/2 c
  • dried parsley flakes - 2 tsp
  • sliced celery - 1 c
  • chicken flavored bouillon cubes - 2 item
  • cubed, peeled, red potatoes - 6 c
  • scraped and thinly sliced carrots - 1 c

How to make cream of potato soup:

Combine 1st 9 ingredients in a Dutch oven. Bring to boil, cover, reduce heat and simmer 7 to 8 minutes or until vegetables are tender. Gradually stir 1/4 cup milk into flour, making a smooth paste. Stir into soup. Add remaining 2 3/4 cups milk. Cook over medium heat until soup is thickened. Makes 9 cups.
