  • flour - 3 Tbsp
  • butter - 1/4 c
  • light cream
  • smooth peanut butter - 2 c
  • peanuts, chopped - 1 item
  • medium onion, chopped - 1 item
  • ribs celery, chopped - 2 item
  • chicken stock or canned chicken broth - 2 qt

How to make cream of peanut soup:

Saute onion and celery in butter until soft but not brown. Stir in flour until well blended. Add chicken stock, stirring constantly and bring to a boil. Remove from heat and puree in a blender. Add peanut butter and cream, stirring to blend thoroughly. Return to low heat but do not boil. Serve, garnished with peanuts. This soup is also good served ice cold. Makes 10 to 12 servings.
