Cream of peanut soup
Ingredients/Components
- flour - 3 Tbsp
- butter - 1/4 c
- light cream
- smooth peanut butter - 2 c
- peanuts, chopped - 1 item
- medium onion, chopped - 1 item
- ribs celery, chopped - 2 item
- chicken stock or canned chicken broth - 2 qt
How to make cream of peanut soup:
Saute onion and celery in butter until soft but not brown. Stir in flour until well blended. Add chicken stock, stirring constantly and bring to a boil. Remove from heat and puree in a blender. Add peanut butter and cream, stirring to blend thoroughly. Return to low heat but do not boil. Serve, garnished with peanuts. This soup is also good served ice cold.
