  • milk
  • flour - 1/4 c
  • butter - 1/4 c
  • cooked chicken - 1 c
  • chicken broth - 4 c
  • mustard - 2 Tbsp
  • fresh chopped parsley - 2 Tbsp
  • toasted croutons to serve - 6 pt

How to make cream of chicken soup:

Melt butter in large saucepan. Stir in flour; cook for 1 minute. Add milk gradually and cook, stirring constantly, until mixture thickens. Add chicken broth; stir well. Bring to a boil; lower heat and simmer 5 minutes. Stir in mustard, chicken, parsley, salt and pepper. Simmer 3 to 5 minutes, or until heated through. Ladle into soup bowls; sprinkle with croutons. Makes 4 to 6 servings.
