Cream of broccoli soup



  • milk - 2 c
  • salt - 1 tsp
  • clove garlic, minced - 1 item
  • large onion, chopped - 1 item
  • pinch of cayenne pepper - 1 item
  • chicken stock - 3 c
  • uncooked rice - 1/4 c
  • medium carrot, sliced - 1 item
  • coarsely chopped broccoli - 3 c
  • small stalk celery with leaves, sliced - 1 item

How to make cream of broccoli soup:

In large saucepan, combine onions, carrot, celery, garlic and chicken broth. Bring to boil; add rice. Cover and simmer for 15 to 20 minutes or until rice is tender. Add broccoli; cover and simmer until broccoli is tender, about 5 minutes. Puree in processor. Return to saucepan; add milk, salt and cayenne pepper. Serve hot. Makes 8 (3/4 cup) servings.
