Cream of broccoli soup
Ingredients/Components
- broccoli spears, cut in 1-inch pieces reserve tops for garnish
- minced onion - 1 c
- butter - 3 Tbsp
- flour - 2 Tbsp
- chicken broth - 2 c
- milk - 2 c
- heavy cream - 1/2 c
- curry powder - 1/8 tsp
- salt and pepper to taste - 1 item
How to make cream of broccoli soup:
Melt butter in soup pot over medium heat. Add broccoli and onion. Saute 5 minutes. Add flour and mix well. Cook 3 minutes, stirring well. Add curry powder, chicken broth and milk; stir well. Simmer, covered, over low heat 30 minutes. Cool to room temperature and puree in food processor or blender. Put back in pot with reserved broccoli tops and reheat over low heat.
