Cream of broccoli soup
Ingredients/Components
- salt - 1 tsp
- low-fat milk - 2 c
- pinch of cayenne pepper - 1 item
- chicken stock - 3 c
- uncooked rice - 1/4 c
- clove garlic, finely chopped - 1 item
- large onion, coarsely chopped - 1 item
- medium carrot, sliced - 1 item
- coarsely chopped broccoli - 3 c
- small stalk celery with leaves, sliced - 1 item
How to make cream of broccoli soup:
Bring to boil first 5 ingredients. Add rice; cover and simmer 15 to 20 minutes. Add broccoli; cover and simmer 5 minutes. Transfer to blender or food processor and puree. Return to saucepan; add milk, salt and cayenne. Serve hot or refrigerate and serve cold.
