Ingredients/Components

  • salt - 1 tsp
  • low-fat milk - 2 c
  • pinch of cayenne pepper - 1 item
  • chicken stock - 3 c
  • uncooked rice - 1/4 c
  • clove garlic, finely chopped - 1 item
  • large onion, coarsely chopped - 1 item
  • medium carrot, sliced - 1 item
  • coarsely chopped broccoli - 3 c
  • small stalk celery with leaves, sliced - 1 item

How to make cream of broccoli soup:

Bring to boil first 5 ingredients. Add rice; cover and simmer 15 to 20 minutes. Add broccoli; cover and simmer 5 minutes. Transfer to blender or food processor and puree. Return to saucepan; add milk, salt and cayenne. Serve hot or refrigerate and serve cold. You may top each serving with a spoonful of low-fat sour cream and chopped chives, dill or parsley.
