Cream of broccoli soup
Ingredients/Components
- stalks fresh broccoli - 3 item
- water - 2 c
- small onion, finely chopped - 1 item
- butter - 2 Tbsp
- flour - 2 Tbsp
- milk
- grated cheese Cheddar - 1 c
- salt - 1 tsp
- pepper - 1 tsp
- sugar - 1 tsp
- cream - 1/4 c
How to make cream of broccoli soup:
Cut off the tops of broccoli stalks and break into flowerets. Discard large stems. Boil 2 cups water in saucepan. Add broccoli and onions. Cover and cook until very tender. Do not drain. Place in blender (or chop by hand). Blend until uniform consistency.Heat butter in large boiler over low heat until melted. Stir in flour. Cook, stirring constantly, until mixture is smooth and bubbly. Remove from heat. Stir in 2 1/2 cups milk. Heat to almost boiling, stirring constantly. Stir in broccoli mixture, salt, pepper, sugar and cheese. Add cream last. Never boil. Makes approximately 8 servings.
