Cream of broccoli soup
Ingredients/Components
- pkg - 1 oz
- milk - 2 Tbsp
- flour - 1 Tbsp
- evaporated milk - 1 c
- chopped onion - 1 c
- chopped celery - 1 c
- salt and pepper - 1 item
- medium cut up potatoes - 3 item
How to make cream of broccoli soup:
Cook chopped potatoes, onion, celery and broccoli until soft and tender. (Barely cover with water while cooking.) Place in blender and blend. Pour in heavy saucepan. Add milk and make a paste of 1 tablespoon flour and 2 tablespoons milk to thicken. Heat slowly but do not boil. Yields 4 servings.Recipe categories: Soups & stews, Bisques/cream soups, Broccoli.
