Ingredients/Components

  • pkg - 1 oz
  • milk - 2 Tbsp
  • flour - 1 Tbsp
  • evaporated milk - 1 c
  • chopped onion - 1 c
  • chopped celery - 1 c
  • salt and pepper - 1 item
  • medium cut up potatoes - 3 item

How to make cream of broccoli soup:

Cook chopped potatoes, onion, celery and broccoli until soft and tender. (Barely cover with water while cooking.) Place in blender and blend. Pour in heavy saucepan. Add milk and make a paste of 1 tablespoon flour and 2 tablespoons milk to thicken. Heat slowly but do not boil. Yields 4 servings.
