Cream of broccoli soup
Ingredients/Components
- milk - 2 c
- butter - 1/4 c
- medium onion - 1 item
- stalks celery - 2 item
- salt to taste - 1 item
- bunch broccoli - 1 item
- large can chicken broth - 1 oz
How to make cream of broccoli soup:
Chop broccoli in small pieces (frozen broccoli can be used). Add broccoli to chicken broth and bring to a boil. Reduce heat to simmer. Chop onion and celery fine and saute in 1/4 cup butter until soft. Add to broth. Add 2 cups milk and bring to simmer. Do not boil. Thicken with flour and water.For variation, add cubes of Velveeta during last phase of cooking.
