Cream of broccoli soup
Ingredients/Components
- butter - 6 Tbsp
- finely chopped onion - 1 Tbsp
- flour - 5 Tbsp
- chicken broth - 1 c
- milk - 2 c
- salt - 3/4 tsp
- dash of pepper - 1 item
- frozen chopped broccoli, defrosted - 10 oz
How to make cream of broccoli soup:
Combine butter and onion in 2-quart casserole dish. Cook at High for 2 to 2 1/2 minutes. Blend in flour. Gradually add broth, milk, salt and pepper; stir until smooth. Cook at medium heat for 8 to 9 minutes or until soup is slightly thickened. Stir occasionally. Add broccoli and puree in batches in food processor or blender. Put broccoli into casserole dish.
