Cream of broccoli soup
Ingredients/Components
- milk - 5 c
- butter or margarine - 4 Tbsp
- flour - 3 Tbsp
- whipping cream - 2 c
- onion, chopped - 1/4 c
- salt to taste - 1 item
- broccoli, chopped - 1 lb
- freshly ground white pepper to taste - 1 item
- grated or minced sharp Cheddar cheese - 4 c
How to make cream of broccoli soup:
Steam the broccoli until tender. Chop coarsely and set aside. Saute the onion in butter or margarine until soft, but not brown. Add flour and stir until paste-like. Blend in milk and cream. Cook over low heat, stirring constantly, until thickened and smooth. Add cheese by the handful, stirring until smooth. Add broccoli and salt and pepper.
