Cream of asparagus soup
Ingredients/Components
- butter - 2 Tbsp
- light cream - 1 c
- chicken broth - 1 qt
- salt, pepper and nutmeg - 1 item
- Parmesan cheese optional - 2 Tbsp
- sliced leeks - 3 c
- diced asparagus - 6 c
How to make cream of asparagus soup:
Melt butter in large pot and saute leeks until tender, 3 to 5 minutes. Add asparagus and chicken broth. Simmer until asparagus is tender, 10 to 15 minutes. Cool slightly. Puree in blender and reheat.
