How to make cranberry relish:

Open bag of cranberries and put them in colander or sieve. Wash under cold water. Shake off excess water. Pick over the cranberries to remove stems or spoiled berries. Put berries in heavy saucepan. Add water.

Using oven mitt or pot holder, put saucepan over medium heat. Let water, with cranberries, come to a boil. Cook for 5 minutes without stirring. Add sugar and continue cooking for 5 minutes. Stir with long wooden spoon.

Open can of crushed pineapple. Add pineapple with syrup to cranberries in saucepan. Continue cooking on low heat, stirring occasionally in saucepan for 10 minutes.

Grate the peel off the orange on the coarse side of the hand grater. Add the peel to the saucepan and stir again. Cut the white pith off the orange and divide the orange into sections. Remove any seeds. Cut orange sections into small pieces and add them to the saucepan. Add raisins. Continue cooking on low flame for 15 minutes, stirring every 5 minutes or so.

Turn off the heat. Add the walnuts and stir thoroughly. When relish has cooled, put it into jar with tight-fitting lid, or into serving bowl if you will use it within a day or two. Refrigerate. Serves at least 10 and is as good on toast as it is when eaten with turkey or other Christmas dinner meat.
