Cranberry nut bread
Ingredients/Components
- sugar - 1 c
- salt - 1 tsp
- chopped nuts - 1/2 c
- flour - 2 c
- baking powder
- baking soda - 1/2 tsp
- shortening - 1/4 c
- egg, beaten - 1 item
- grated orange rind - 1 Tbsp
- orange juice concentrate - 3/4 c
- raw cranberries - 1 c
How to make cranberry nut bread:
Sift dry ingredients and cut in shortening until like coarse cornmeal. Combine juice and rind with egg. Mix at high speed until foamy and add to dry mix. Mix just enough to dampen. Carefully fold in chopped nuts and cranberries. Spread in loaf pan, corners and sides a little higher than center. Bake 1 hour at 350° or until toothpick comes out clean. Remove from pan to cool.
