Ingredients/Components

  • cinnamon - 1/2 tsp
  • salt - 1/8 tsp
  • cornstarch - 3 tsp
  • orange juice - 3 Tbsp
  • orange peel, grated - 1/2 tsp
  • dry sherry wine - 3 Tbsp
  • can whole berry cranberry sauce - 1 oz
  • boneless pork loin roast - 4 lb

How to make cranberry-glazed pork roast:

In small saucepan, stir together all ingredients, except pork. Cook, stirring, over medium heat until thickened; set aside. Place roast in shallow baking dish. Roast at 325° for 45 minutes. Spoon 1/2 cup glaze over roast; continue roasting for 45 minutes more, until internal temperature is 160°. Let stand 10 minutes before slicing. Serve with remaining sauce. Makes 14 to 16 servings.

Note: We call this the Other White Meat. Simply cook to medium 160° until slightly pink for perfect tenderness.
